A clear, cool night follows and windspeed drops. The tiles/slates rapidly cool and the still warm, moist air inside condenses some if it's moisture out on them.

We live in North Cornwall, a tin shed will sweat with no internal sources of moisture. Worst is when the wind changes direction from West to east.
