What do you think of this stuff?
    http://www.cellecta.co.uk/cellecta-brands/fibrefon-acoustic-insulation-products/fibrefon-microslab-50/

I grabbed it in the heat of the moment while on our first shop for materials, because none of the mineral/glass wool insulations had their density specified (why is that??)

Didn't actually realise it was polyester. Don't think it's from recycled materials either. There's better stuff to insulate partitions with right? Nice and soft though!

All the same stuff. You could use the Knauf non-itch ecowool or similar.

'Acoustic' insulation is the same as thermal insulation - perhaps slightly different densities but nothing is materially different.

It is the same as 'Acoustic Sealant' - it is the same as flexible silicone bathroom sealant - just with acoustic printed on the tube.

But I was wondering perhaps if mineral wool is a more sustainable product? Especially as this product is made from virgin material.

The density of this is much higher than the standard wool insulation. What I found strange is that I couldn't find any mention of densities anywhere on the products on the shelf and yet this is how we specify acoustic insulation at work.
  1.
I've used Rockwool RW6 batts with a density of 140kg/m3,at the other end of their range RWA45 has a density of 45kg/m3. The thermal conductivity was the same for both IIRC.

Actually I tell a lie, bale says "up to 80% recycled material".
