The choice of resin is important. I was always impressed with the Cray Valley Encore 30 polyester resin and the Llewelyn Ryland gelcoats (http://www.llewellyn-ryland.co.uk). They worked well together.
Matt is not so important, but stick to 1 1/2 oz (450 g/m^2)

So Fibreglass Direct and the like is maybe not the best choice?

And how come these kits don't mention Gelcoats?

They call it top coat which is really the proper term for it (or flow coat).
Gelcoat is used when using a mould, top/flow coat is a mix of layup resin, gelcoat and a wax ad dative. We always made our own up, was cheaper and easier for us.
Don't be tempted to just paint a gelcoat on as it is not designed to cure on the 'air' side.
A gelcoat is flexible and softer than a layup resin but can still be made to shine nicely when polished correctly. A top/flow coat will be matt.
