My builder has installed steel beams over 2 patio doors. This is 2x I shaped beams bolted together rather than one single beam. Plus a beam that connects into it. I don't have the option of insulating between the beams.

These will have some sort of fire protection board (?Fire-rated plasterbd) applied to them.

Q: Seems to me I am looking at lots of cold-bridging here. What insulation options do I have? Without falling foul of fire regs...

Builder says I can apply some insulation to the beam web with no problem (probably just stick some EPS to it...)

I would add insulation between the head of the new doors and the steel and then outside the outside one and in the outside web, and over the top of it, all with sheet insulation, effectively bring the steels inside the thermal envelope

I think they are 2 x " L " beams back to back not an "I" beam.

It surprises me why, generally, people don't use Glulam and save much of the insulation problem. Fixings for suspended sliding doors etc. are dead easy.
I met someone the other day doing something similar to this and had never even heard of Glulam. I guess he wasn't that interested in insulation either.
