    Something say 50-75mm wide by 50mm thick... ie really 50mm not 44 or 45 or 47 but really actually 50mm...

    any local timber yard will cut it for you out of a bigger bit try 125 x 75 cut to two 75 x 50

    And make sure it is at target moisture content, or it won't be 50 mm for long (unless that aspect doesn't matter).

    Does this mean most 50mm ventilation gaps are usually nearer 45 - 47mm?

    If formed using timber battens, then yes!

    Doesn't really matter though. A few millimeters doesn't make much difference in most situations.

    You can get 47 x 50mm battens according to Google. Some places also sell 25 x 50mm "premium" battens that are "in the full" or "full/fully dimensioned"
